    In a small pot , bring israeli couscous , veggie stock concentrate , and water to a boil. Once boiling, cover and reduce heat to low. Cook until couscous is tender ⏱️ 6-8 minutes . Fluff with a fork and stir in olive oil and the juice of lemon .

    In a small microwave-safe bowl , combine white wine vinegar , water{3%tbsp}, sugar , and a pinch of salt . Add shredded red cabbage and microwave until cabbage softens and liquid boils ⏱️ 2 minutes . Let cool slightly, then drain.

    In a large bowl , combine ground chicken , panko breadcrumbs , half the garlic powder , shawarma spice blend , salt{¾%tsp}, and black pepper . Form into small patties, 2-3 per person. Heat cooking oil in a large pan over medium-high heat. Cook patties until golden brown and cooked through ⏱️ 3-4 minutes per side.
